Six oysters on ice
Opened to order, with shallot vinegar and brown bread
Newlyn Harbour · Cornwall
We buy at the market at six, grill over charcoal from midday, and chalk the price on the board because it changes with the weather. Twelve tables, most of them looking at the water.
Sold by the kilo and cooked whole. When it is gone we cross it off.

Since 1974
Rose Trewin opened this room with four tables and one grill, mostly to feed the men unloading boxes across the road. The menu was whatever had not sold at auction, which is more or less still the arrangement.
Her grandson runs it now. Twelve tables, eight of them under the awning outside, and the same grill — rebuilt twice, in the same corner.
Lit at eleven. It is why the sardines taste of smoke and why we cannot rush a whole fish for you.
Fish is bought by the kilo at auction. On a rough week there is less of it and it costs more — the board tells you before you sit.
The market is closed, so we are too. It is the day the floor gets scrubbed and the copper pans go back to the tinsmith.
Friday and Saturday fill by Wednesday. For parties over six, please call — we move the long table outside for you.
